Chef Michele Dell’Aquila’s latest culinary vision draws from the sun-soaked cuisines of Spain, Italy, Greece, and Southern France. The menu is crafted around honest, premium ingredients and showcases an authentic yet elevated approach to Mediterranean cooking. It’s not just about the food—it’s a full-sensory experience designed to transport diners straight to the Mediterranean.
Guests can expect refined yet rustic signature dishes such as the Greek Style Grilled Octopus with Kalamata olives and Pequinillo peppers, and the bold Piri-Piri Prawn, a nod to Portuguese spice trade history. The Grilled Spring Chicken with rosemary and heirloom carrots brings a smoky, herbaceous flair, while the Seafood Risotto layers prawn, squid, mussels, saffron, and tomato in rich, coastal harmony.

Complementing the menu is a curated cocktail lineup inspired by coastal Europe. The Violet Horizon stirs violet liqueur and butterfly pea flower with Bombay gin for a floral-meets-fantasy finish, while the Marseille Mistral brings a savory twist with seaweed-infused whisky, citrus, and spice—a drink that feels like a seaside stroll through a Provençal market.
