Khoya gujiya : Home made khoya : Milk powder – 1 cup Ghee – 1/4 th cup Milk – 1/4 th cup 1. Mix the milk powder, milk and ghee together to form a paste. 2. Heat this in a microwave for 3 minutes by stirring it once in every 30 seconds. This forms a thick Mawa. Khoya coconut filling : Khoya – 1 cup Grated coconut – 1/4 th cup Sugar – 4 tbsp Elaichi powder – 1/2 tsp 1. Heat the coconut and sugar together in a nonstick pan. 2. Cook for few minutes and add the khoya and the elaichi powder. 3. Cook till it forms a thick mixture which takes about 10 minutes. Keep aside. Outer covering : For the dough : Maida – 1 cup Refined oil – 4 tbsp Water Salt Sugar syrup : Sugar – 1.5 cups Water – 3/4 th cup Oil for frying 1. Mix the ingredients mentioned under “for dough” to form a tight dough. 2. Rest it for 10-15 minutes. 3. Make small round rotis out of the dough. 4. Put little filling inside each roti and seal the ends using little water to form a half moon. 5. Heat lots of oil and deep fry the gujiyas on a low flame. Keep aside. 6. Make a sugar syrup of two string consistency. Cool it for few minutes. 7. Dip the fried gujiyas into the sugar syrup and take them out. Serve.
