seviyan kheer, tasty and easy dessert recipe with vermicelli

  • vermicelli or seviyan - ½ cup
  • hot milk - 2 and ½ cups
  • water - ¾ cup
  • sugar - ½ cup + little more
  • saffron strands - few
  • ghee - 3 teaspoons
  • cardamom powder - ½ teaspoon
  • cashew nuts - 4 - 5
  • raisins - 4 - 5
  • almond slivers - few
  1. Heat ghee in a pan. Add cashew nuts, raisins, and chopped almonds, fry them. Transfer them to a plate and keep aside. To the same ghee, add vermicelli and saute well for 3 to 4 minutes in medium flame until the vermicelli turns golden in color.
  2. Add ½ cup milk and ¾ cup of water. Bring it to a boil. Reduce the flame to low and cook until vermicelli gets cooked well until soft. Keep stirring continuously to avoid sticking to the bottom of the pan.
  3. Once the vermicelli is cooked till soft, add the rest of the milk, sugar and cook on a medium flame for 2 - 3 minutes. Keep stirring continuously.
  4. Finally, add cardamom powder, and mix well. Turn off the flame.
  5. Add the fried cashew nuts, raisins and almonds. Mix well.
  6. Serve seviyan kheer. You can also keep it in the refrigerator and serve it chilled. But vermicelli kheer will thicken as it cools. So add hot milk to adjust the consistency.
