  • pumpkin(yellow) - ½ kg
  • chili powder - 1 teaspoon
  • turmeric powder - ½ teaspoon
  • pepper powder - ½ tsp
  • grated coconut - 2 cups
  • jeera or cumin seeds - 1 tsp
  • salt - to taste
  • For seasoning
  • coconut oil - 2 tablespoons
  • mustard seeds - 1 teaspoon
  • grated coconut - 3 tablespoons
  • curry leaves - 7-8
  1. cut the pumpkin into small cubes
  2. grind coconut and jeera together to become a fine paste
  3. Add the pumpkin, turmeric powder, chili powder, salt, water to a pan and cook till pumpkin gets cooked well.
  4. Once the pumpkin pieces are cooked well, mash it lightly and then add the prepared coconut jeera paste.  Mix well.  Cook in a low flame.  Don't cook for a long time, it will curdle.
  5. Turn off the flame.
  6. In another pan, heat coconut oil.  Splutter mustard seeds.
  7. Then add the chopped shallots, and fry for some time and then add the rest of the coconut, curry leaves fry nicely till the coconut becomes golden brown color.
  8. mathan erisserry is ready.  Serve with rice.
