Ingredients
  • potato - 2, medium
  • cauliflower - ¾ cup
  • peas - ½ cup
  • carrot - 1 medium
  • french beans - 8 - 10, chopped
  • capsicum - ½ cup
  • onion - 1 large, finely chopped
  • green chili - 1, finely chopped
  • ginger garlic paste - 2 teaspoons
  • tomato - 2 large, chopped
  • turmeric powder - ¼ teaspoon
  • red chili powder - 1 teaspoon
  • pav bhaji masala powder - 3 tablespoons
  • salt - to taste
  • butter - 2 - 3 tablespoons
  • kasuri methi - ¼ teaspoon
  • lemon juice - 1 teaspoon
  • for garnishing
  • butter - 1 tablespoon
  • onion, finely chopped
  • coriander leaves, finely chopped
  • lemon wedges
Method
  1. Pressure cook all the veggies with enough water and salt for 4 - 5 whistles.
  2. Open the pressure cooker and mash with a potato masher. Keep aside.
  3. Heat butter in a pan.
  4. Add finely chopped onion and saute well.
  5. Add ginger garlic paste, chopped green chilies and saute till the raw smell goes off completely.
  6. Add chopped capsicum and saute well for a few minutes.
  7. Add chopped tomatoes, and saute well till tomatoes turn mushy and fat starts separating on the sides of the pan.
  8. Add red chili powder, turmeric powder, pav bhaji masala, saute for 2 - 3 minutes.
  9. Add the cooked and mashed vegetables, mix well. Add more salt if necessary.
  10. Add ½ to 1 cup water, mix well. Bring it to a boil. Simmer for a few minutes.
  11. Add lemon juice, mix well. Add crushed kasuri methi. Turn off the flame.
  12. Garnish with coriander leaves. Add a tablespoon of butter on top.
  13. Cut pav buns horizontally from the middle.
  14. Heat a griddle and add 1 tablespoon of butter.
  15. Place the halved pav buns over it and fry on medium flame till golden spots appear on top.
  16. Fry on both sides. Transfer it to a serving plate.
  17. Repeat the same steps with the rest of the pav buns.
  18. Serve pav with bhaji.
