phirni, tasty, creamy Indian dessert made with rice, milk and sugar. It is an eggless rice pudding.

  • ¼ cup basmati rice
  • 3 and ½ cups milk
  • ½ cup sugar or as required
  • 1 teaspoon rose water
  • for garnishing
  • 10 to 12 almonds, blanched
  • 2 tablespoons pistachios, unsalted, blanched and slivered
  • 5 - 6 saffron strands, soaked in 1 tablespoon warm milk
  1. Wash and soak rice in a bowl of water for 30 minutes.
  2. Drain the excess water from rice.
  3. Add the rice to a blender or food processor and grind it to a coarse paste. Keep it aside.
  4. Take one tablespoon of warm milk, add few saffron strands to it and keep it aside.
  5. Bring milk to a boil in a large, thick-bottomed pan. Once the milk starts boiling, reduce the flame and simmer for 2 - 3 minutes.
  6. Add the rice paste. Keep stirring while adding the rice in order to avoid formation of lumps. Keep on stirring so that it does not stick to the bottom of the bowl.
  7. Continue cooking over low flame for about 20 minutes or until the milk is reduced by ⅓rd.
  8. Add sugar and mix well until it melts completely. Add saffron milk, if using, mix well. Turn off the flame.
  9. Pour the dessert into serving bowls and decorate with almonds, pistachios. You can also sprinkle a few drops of rosewater over the top.
