Ingredients
  • rice flour - 1 cup
  • onion - 1, small
  • green chili - 2, finely chopped
  • ginger - ½ teaspoon, optional
  • coconut - ¼ cup, optional
  • hing - a pinch
  • cumin seeds - 1 /2 teaspoon
  • carrots - ¼ grated, optional
  • salt - to taste
  • coriander leaves - few, finely chopped
  • curry leaves - few
  • water - as required
Method
  1. Take rice flour in a bowl.
  2. To this, add chopped onion, chopped green chili, coriander leaves, curry leaves, grated ginger, carrots, coconut, cumin seeds, hing, and salt.
  3. Mix well with your fingers.
  4. Slowly, add water little by little and knead it to make a soft dough. Keep it aside covered for 15 to 20 minutes.
  5. Take out the dough, and knead it once more.
  6. Divide the dough into equal portions.
  7. Take a plastic cover or a parchment paper or a cotton cloth or if you can get a banana leaf use that. Grease it with oil.
  8. Place one portion of the dough on the plastic sheet and start flattening it by pressing it with your fingers. Try to flatten it evenly.
  9. Make three holes in the middle.
  10. Heat a tawa and grease it with oil.
  11. Now slowly place the rolled circle on top of the tawa.
  12. Keep it for one or two seconds and then turn it to the other side.
  13. Drizzle oil around the edges and at the center.
  14. Cook the roti on both the sides till brown spots appear on both the sides. Repeat the same steps for the rest of the dough.
  15. Serve akki roti hot with onion tomato chutney
