Ingredients
  • basmati rice - 1 cup
  • ghee - 1 teaspoon
  • oil - 2 tablespoons
  • cardamom - 1
  • cinnamon - 1 small piece
  • cloves - 3
  • bay leaf - 1
  • fennel seeds - ½ teaspoon
  • onion - 1
  • ginger garlic paste - ½ teaspoon
  • green chili - 1, slit
  • tomato - 2, medium
  • turmeric powder - ¼ teaspoon
  • red chili powder - ½ teaspoon
  • garam masala - ½ teaspoon
  • water - 1 and ½ cups
  • salt - to taste
  • coriander leaves - 1 tablespoon
  • mint leaves - 10 - 12

Method
  1. Wash rice and soak basmati rice in water for 15 to 20 minutes.  Drain the water and keep it aside.
  2. In a pressure cooker, heat oil plus ghee.  Add cinnamon, cloves, cardamom, fennel seeds, bay leaves and saute for a few seconds.
  3. Then add sliced onion and saute well till it turns translucent. Then add ginger garlic paste, green chilli and saute till the raw smell goes off.
  4. Then add coriander leaves and mint leaves. Saute well.
  5. Now chopped tomato, red chilli powder and turmeric powder and saute nicely. Saute till tomatoes get cooked well and become mushy.
  6. Add soaked and drained rice, garam masala, gently saute again for a few minutes.
  7. Add water, mix well.  Check for salt, if necessary, add more.
  8. Bring the flame to low, cover the pressure cooker with lid, put the weight and let it cook for 10 minutes.  After 10 minutes, turn off the stove.
  9. Once the pressure subsides, open the cooker and fluff it up with a fork.  tomato pulao is ready.
