  • besan or gram flour - 1 cup
  • methi or fenugreek leaves - ½ cup
  • oil - 1 tablespoon + for deep frying
  • baking soda - a pinch
  • salt - to taste
  • sugar - 1 teaspoon
  • hing or asafetida powder - ¼ teaspoon
  • peppercorns - 5 - 6, slightly crushed
  • coriander seeds - 1 teaspoon, lightly crushed
  • ajwain or carom seeds - ½ teaspoon
  • green chili - 3 - 4 , finely chopped
  • lemon juice - ½
  • water - ⅔ cup
  1. To make methi na gota, first add water, lemon juice and oil to a bowl. Mix well.
  2. To this add a pinch of baking soda, crushed coriander seeds, crushed pepper corns, green chili, salt, sugar, ajwain, hing. Mix well.
  3. Add finely chopped fenugreek leaves and mix well.
  4. Add besan and mix well without lumps.
  5. Heat oil in a pan. Take medium sized pinches of dough. Once the oil is hot enough, carefully drop these balls into the hot oil.
  6. Let them cook for a few seconds around 35 to 40 seconds and then slowly move them around until they get fried well and become golden in color.
  7. Using a slotted spoon remove them from hot oil and place them on an absorbent paper or a kitchen towel to drain the excess oil.
  8. Repeat the same steps with the rest of the batter. methi na gota is ready. Serve with green chutney.
