  • sooji or rava - 1 cup
  • curd or yogurt - ¾ cup
  • water - ½ cup
  • salt - to taste
  • baking soda or cooking soda - ¼ teaspoon
  • oil - for making paniyaram
  • for tempering
  • oil - 1 teaspoon
  • mustard seeds - ¼ teaspoon
  • urad dal - 1 teaspoon
  • onion - 1 small, finely chopped
  • ginger - ½ teaspoon, grated
  • green chili - 1, finely chopped
  • curry leaves - few
  1. Add sooji or rava, curd or yogurt, to a bowl. Mix well. Add water little by little, mix well. Add salt, mix well. Keep the batter aside for 10 to 15 minutes.
  2. Heat oil in a pan. When the oil is hot enough, splutter mustard seeds.
  3. Add urad dal and sauté till urad dal turns golden. Add finely chopped onion, ginger, green chili, curry leaves, and saute till onion turns translucent. Turn off the flame. Allow the mixture to cool.
  4. Now add the prepared tempering to the rava batter, mix well. Add baking soda, mix well.
  5. Heat a paniyaram pan. Add a teaspoon of oil to all the holes of the pan. Once the pan is heated, add spoon full of batter into the holes. Fry in a medium flame till the bottom becomes crisp. Flip and cook on the other side too.
  6. Remove them and transfer to a serving plate. Serve rava paniyaram with coconut chutney.
