kashmiri pulao recipe, tasty rice recipe with dry fruits for lunch

Ingredients
  • basmati rice - 1 cup
  • bay leaf - 1
  • cardamom - 2
  • cinnamon - 1-inch piece
  • cloves - 2
  • cumin seeds - 1 teaspoon
  • fennel seeds - ½ teaspoon
  • saffron - 2 pinches
  • milk - 2 tablespoons
  • onion - 1, sliced
  • ginger paste - 1 teaspoon
  • cashew nuts - 10 - 12
  • almonds - 10 - 12
  • pistachios - 10 - 12
  • raisins - 10 - 12
  • ghee - 2 tablespoons
  • water - 1 and ¾ cups
  • salt - to taste
  • apple - ½ cup
  • pomegranate - ½ cup
Method
  1. Wash and soak rice in enough water for 15 to 20 minutes. Drain the excess water and keep aside. Add 2 pinches of saffron to warm milk, mix well and keep aside.
  2. Heat oil or ghee in a pan. When the ghee becomes hot enough, add cashew nuts, almonds, pistachios, and raisins. Fry till done. Transfer them to a plate. Keep aside.
  3. To the same pan, add some more ghee. Add ½ of the sliced onion and fry till they become golden. Keep this aside along with nuts.
  4. In the same pan, add 1 tablespoon of ghee, add cardamom, cinnamon, cloves, bay leaf and saute for a second. Add cumin seeds, fennel seeds and saute till the sizzle.
  5. Add sliced onion, green chili and saute well till onion turns light brownish in color.
  6. Add the soaked and drained basmati rice, stir well. Saute for a few minutes so that the rice gets a nice flavor. Add the roasted nuts, saffron milk, mix well.
  7. Add water, saffron milk, salt, mix well. I have used a pressure cooker for cooking the rice. So I have mentioned water accordingly. But you can also cook rice in a pan. Cover the pressure cooker with a whistle and cook for 10 minutes in a low flame.
  8. Wait till the pressure subsides. Then open the lid of the pressure cooker, and gently fluff the rice with a fork.
  9. Garnish with fried onion, nuts and fruits.
  10. kashmiri pulao is ready.
