Ingredients
  • kabuli chana or white chana - 1 cup
  • oil - 2 tablespoons
  • onion - 1, big
  • tomato - 2
  • ginger garlic paste - ½ teaspoon
  • turmeric powder - ½ teaspoon
  • red chili powder - ½ teaspoon
  • coriander powder - 1 teaspoon
  • salt - to taste
  • lemon juice - 1 teaspoon
  • water - as required
  • coriander leaves - 1 tablespoon, finely chopped
  • for grinding
  • coconut - ½ cup, grated
  • cardamom - 1
  • cinnamon - 1-inch piece
  • cloves - 2
  • green chili - 2
  • fennel seeds - 1 teaspoon
  • cashew nuts - 4 to 5
  • poppy seeds or khus khus - ½ teaspoon
Method
  1. Wash and soak chana overnight or for 8 hours.
  2. Pressure cook with enough water.
  3. Add all the ingredients mentioned under the heading "to grind" into a mixer jar and grind it to a smooth paste.
  4. Heat a kadai or a pan and add ghee or oil to it. When the oil becomes hot enough, add bay leaf.
  5. Add onion, ginger garlic paste and saute till it turns translucent.
  6. Add chopped tomato, salt, and saute well on a medium flame till it turns mushy and oil starts separating.
  7. Add turmeric powder, red chili powder, coriander powder, and saute till the raw smell of masala goes off completely.
  8. Add the cooked chana along with the cooked water, and bring it to a boil. Let it boil for 3 - 4 minutes.
  9. Add the ground coconut mixture, mix well. Add water if required.
  10. Boil for 5 to 6 minutes in a medium flame. Turn off the flame. Add lemon juice, coriander leaves and mix well.
  11. chana kurma is ready. Serve kondakadalai kurma with chapati.
